The anecdotes of Infanta Elena's birthday: the Christmas menu of pumpkins, chestnuts and carabineros

Back to Infanta Elena's birthday meal. The daughter of the emeritus kings chose Pabú, a restaurant in the Chamartín neighborhood of Madrid, close to the Bernabéu stadium. An event that brought together the Borbón family in three generations: Felipe VI and Letizia, the King's family, his parents, sisters, nephews and uncles. Everyone went through the improvised photocall, everyone posed and sat together to share a table, but there was no joint family photograph. This is what they ate at Elena's party.

Commanding Pabú is chef Coco Montes, trained at the prestigious Le Cordon Bleu. The restaurant has two floors, a dining room, kitchen and wine cellar. Be careful because the kitchen has its own bakery where they bake the bread, which is one of the great delicacies on the table. Montes is dedicated to micro-seasonal cuisine, focused 100% on the product and the temporality that marks each season. Pure and simple recipes. The menu that was served at Elena's table was custom designed, as reported in We'll see. It was a three-course meal. It started with a starter of pumpkin with chestnut and buckwheat butter; later, carabinieri; and a main of capon or sea bass. For dessert, custard tart with hazelnut and pear praline and vanilla chantilly with bourbon.

This menu does not correspond to any of those offered by the restaurant, which are called Pate y Bubú. It is a long version and a short version. El Pate brings together seven dishes, from starters to dessert; and Bubú five.

More anecdotes. Queen Letizia entered the kitchen to thank the team of workers including cooks and waiters who were in charge of preparing and serving the event. They tell it on the Telecinco program. In addition, Elena thanked the restaurant staff for the attention received. At the exit, the infanta greeted her father with a ritual of palms that both exchanged with complete naturalness.. The sign of the cross on the forehead, shock and handshake and palms on the shoulder, next to the chest. A family greeting that they have always exchanged, they say in the chain. And one more detail.
